It’s a new year and that means it’s time to step up your running nutrition – here is a quick and easy, nutrient dense waffle recipe that will give you that much needed energy to power through winter running!
Ingredients:
- ¾ c liquid egg whites
- ¼ c gluten-free oats
- 2 tbsp pumpkin puree
- ½ tsp baking powder
- 1 tsp hemp or chia seeds
- ½ tsp cinnamon
- ¼ tsp nutmeg
- ¼ c plain Greek yogurt
- Dried or fresh fruit of choice (I used dried figs)
Instructions:
Pre-heat waffle iron. Mix egg whites, oats, pumpkin puree, baking powder, seeds, cinnamon and nutmeg in a bowl. Pour into waffle iron and cook until golden brown and slightly crisp. Top with Greek yogurt, a few extra seeds and fruit.
Recipe Notes:
Depending on the size of your waffle iron, this recipe will make 1 or 2 waffles. As you pour the mix into the iron, you will need to spread out the oats as they tend to all clump together. Double or triple the batch and freeze up to a week for a quick and easy meal option.
